My head of broccoli was smallish so I roasted like a cup of cauliflower and a little kohlrabi along with and the soup came out thick and creamy! I think you could even leave out the cheese, really, if you wanted something totally vegan.

Successfully talked myself out of buying coffee at Starbucks when I have perfectly good coffee at home. Enjoying that now and trying not to be convinced by a cuddly Pumpkin to nap. Cause I have cleaning and de-acing to do today!
Also, she was very close to my mom's age, that always makes me a little anxious.
Yeah, I'm finding that, too. I think 70 is young now. I mean, young to be old, at least.

This freezing of vegetables thing is something I should try. Except our freezer is tiny.
The muffins are very tasty but look, um, not good and are kind of problematic as finger food.
t, what sort of low-carb or high-protein finger breakfast foods have you found? I'm having a hard time figuring out what I can eat for breakfast that isn't super carby, and I think I need to (not really trying to cut carbs, just trying to cut "breakfast that is entirely carb", which is most things I can purchase at the coffee shop)
I've been making these "muffins" that are meat and cheese and an egg-cream mixture, baked in muffin tins (silicone liners = awesome). A little greasy to eat with one's fingers, but slightly more manageable than a plate of bacon and eggs. Or, like Atkins bars and shakes, I rely on those pretty heavily, really. Oh, sometimes a chunk of cheese and a piece of fruit (not really low carb, but I figure one piece of actual fruit is always okay, because it just is, okay?) - no cooking, and no plates!
Disclaimer: I'll eat a piece of quiche with my fingers, too, so maybe my standards for finger foods are, um, liberal. One of these days I will get off my ass and buy myself some mini springform pans and make a bunch of mini quiches to have ready to eat.

I went to a party as a 70's Disco Babe last night, and my feet hurt, my feathered bangs are sticking straight up, and I got a little tipsy, so my blue eyeshadow is still on.
Drinking ice water AND coffee; I'm not hungover, but man, I woke up dehydrated. I am such a cheap date these days. My two of my friends came as Daryl and Carol from the Walking Dead, and they were perfect!

My roommate made some quinoa-ham-egg "muffins" a while back that were really good, but mini, and somehow we just kept popping them in our mouths--we decided at the time that they might be better as full-size, because it'd be easier to think of them as a serving. I need to find out where she got that recipe and try it again...
I love quiche, but feel like it's easier to eat by hand when there's crust, but crust isn't good for me...
