Yesterday was a crappy day for me. I went through subway hell trying to get to my therapy appointment yesterday, I was really late, and I had a huge meltdown when I finally got there.
When I got home, I made myself a big plate of roasted brussel sprouts. I was the first time I cooked for myself in weeks and weeks. It was SO GOOD.
I'm not sure how much olive oil the sprouts would have to be smothered in before they stop being healthy, though.
I had roasted brussels sprouts last night too! I would NEVER have guessed that I would love those little cabbage bombs, but I do.
Olive oil is good for your heart! Sorry about the crappy yesterday; may the rest of the week make up for it.
I have tried roasted brussel sprouts and roasted cauliflower, and nope, they still taste awful to me. Sauteed kale with balsamic vinegar and toasted almonds, on the other hand, are awesome.
Not that I'm eating any of that right now, because it's all mushy food and liquids for me for the next few days. Bonny, thank you again for talking about bone broth, because it's a lifesaver during this.

My PCP increased my thyroid meds, and I've astonished myself with how well I've felt, how much energy I've had. I'm sort of appalled how lumpish I've been for a couple of years, now. I'm still not "exercising" (Ptui!), but I'm being a lot more active around the house, and I am doing reps with 5lb free weights nearly every day, stretches, etc. Soon I may resort to Actual Walking, if the joints will stand for it.
My lunch for the last few weeks has been--and is today, homemade tuna salad and egg salad in lettuce wraps, a scotch-rocks glass full of celery sticks with a Chinese teacup half-full of homemade hummus. Breakfast most usually is whole oats cooked with dried cranberries, broken walnuts and coconut oil, and coffee--with cream and sugar.
I may have a banana if the hunger pangs get me before dinner time, or a handful of whole roasted almonds. Or tea with milk and sugar and a homemade low-wheat oatmeal-cranberry-walnut cookie. There may be a Klondike bar after dinner, or not. And if I'm too hungry to sleep, a little Greek yogurt before bed.
The only soda I drink is club soda, sometimes cranberry or orange-mango juice cut half with club soda. Otherwise it's coffee in the morning, maybe tea in the afternoon, and water the rest of the time. Lots of water.
Teppy, the celery and the almonds have been a huge help in regularity for me, too. My system hates it when I skip them.

Then don't eat it. There are a lot of fiber-y foods out there that don't taste like twigs.
I'm with Steph, with all the delicious grains and veggies out there, there's no need to eat twigs.

Scola, I'm sorry yesterday was a bad one, but I'm happy your sprouts were tasty!
I can't get H to roast anything. But he's a master at steaming stuff to the perfect point of still-crunchy and doneness, and adding herbs to enhance the flavors. I've yet to try kale chips, but his steamed kale with mustard-yogurt dressing is to die for, so I'm happy. I don't think anything can rescue cauliflower for me, though he loves it.
My kids will inhale kale chips.
I'm with Beverly on the exercise front, so far. I feel so much better and have more energy, but still not inspired.
Snow shoveling was easier this time around and I'm taking dance breaks...that Happy song is the bomb...but getting on my spinning cycle has not yet happened.
