So, I found out why Bubble and Squeak is called that. When I got home at 10:30 from work (why am I working law firm hours again?), I didn't really feel like cooking. I had some leftover corned beef hash, but it needed a little bulking up. I had some frozen brussel sprouts, so I defrosted them, chopped them up with some potato and threw it into a skillet (with some bacon fat). I put a lid on it and went to change my clothes. When I wandered back into the kitchen, I was startled to see hear the pan making a weird noise. Kind of popping and, well, squeaking. And the light bulb went on!
It was good, too. I might try making it on purpose next time.
(we all know she did NOT take only the scrapings of the mac and cheese. c'mon.)
I've got an appointment with a hand surgeon in a couple weeks, since my thumb is getting worse again. I could have gotten an earlier appointment with a different doctor, but this one is supposed to be really good, and I don't really want to mess around when it comes to stuff that could screw up my hand. If it were a six month wait, I might feel differently, but for a couple weeks, I'll wait for the doctor who's supposed to be the best.
Brussels sprouts bacon fat potatoes and corn beef hash? That sounds deicious
That sort of thing sounds like the reason bacon fat exists. Bubble and sqeak, I mean, not waining a couple weeks to see the best hand surgeon.
I hope the hand surgeon gets you fixed up, Hil.
Mom just took ltc out. I have my house to myself for an hour!
Possibly mommy naptime at sj's?

Minus the bitter greens that sounds delicious to me too!
It amuses me that making that meal is what Vortex does when she *doesn't* want to cook. What would be actual "cooking", Vortex?
No, shower and reading time at sj's. Then Mom picked me up and we went to lunch, which was school vacation chaos. And now I'm out alone doing errands until I have to be at the library to volunteer.
