Lots of plants like coffee grounds. It's on the acidic side, which is good for citrus and azaleas (maybe roses? I treat my roses like herbs, so I don't know what they actually prefer) but you can easily balance that with eggshell if you want a more neutral compost (either in a bin or as mulch, depending on how icky you find coffee grounds and eggshells in your garden).

I'm pretty sure that coffee grounds and egg shells are two of the main components in my compost, heavy on the coffee grounds, for reasons that have more to do with breakfast than with balancing out the ph.
