I am so tired of thunderstorms and grey skies. True, it's been a little cooler than usual for this time of year(not very much, though), but I'm feeling kind of down, and the lack of sun may be a factor.

I usually cook up a vat of something on the weekends, soup or curry or stir fry, something that's easy to reheat. I eat a snack before I leave work, usually almonds or sunflower seeds, just to keep myself from cutting someone. By the time I get home after running errands and exercising, it depends on how I'm feeling. If I'm starving, I eat leftovers. If I'm not, I'll make a salad or roast some vegetables or braise some greens. I keep certain ingredients handy like eggs and cooked lentils and cheese and marinara so that I can quickly build a salad or an omelette or a small pizza.

I am not hungry when I leave work, but I try to eat my big meal at lunch and I drink tea or water all afternoon. I keep a handful of frozen dinners and I almost never cook a single meal at a time. Multiple meals cooked on the weekend or on a night I am feeling productive.

Last year, I tried to prep once a month and then cook at home most days. Now we make a big load of meat, usually grilled chicken, once a week and we eat that in various guises all week. Usually salads.

I've been also trying to eat eggs more, especially shirred or poached, particularly with avocado.

Poached eggs on salads are delicious. I love salad on top of toast with a poached egg on top of that. I like toast for the sopping.
