Last night's cupcake was lemon meringue--lemon cupcake with a graham cracker bottom, filled with lemon curd, and a meringue frosting (which was more marshmallowy, but still yum)

Ooh, that sounds delish!

I am preemtively excited about this calzone situation, because I could buy the pizza dough at TJs and make several at once, and freeze them for later!

I miss everybody all the time.

I make superbowl calzones every year, lots of variations. Ham & cheese, feta & spinach, italian sausage and bell peppers. They do freeze up nicely, but take forever to cook from frozen.

I thawed in the fridge from this morning, but it still took 45 minutes, which is kind of forever for me. But still, a win!
