Jilli, there's a gluten-free Bisquik mix, though I haven't tried it. My go-to for pancakes (and a lot of other baked goods) is Pamela's baking mix.

Have I mentioned how much I love Pizza from Anna GF dough? Because I totally love it. That hasn't kept it in stock at the nearest GF store however. Hmph.
