HO. LEE. CRAP. Just had what a local rogue chef called Chef Pete calls "Foie-reos". Foie gras mousse in between shortbread rounds that are made with foie and butter, as well as indian spices. GOD.
I made speculaas cookies today! Have the icebox cookies in the fridge waiting to bake off. mocha cookies will need to wait till tomorrow. Was gonna make a lamb korma curry for dinner but I think a couple Foie-reos will do me up right good.

We tried spaghetti squash for the first time tonight. It was surprisingly easy to make, and it tasted good as well. We got a huge one from our CSA, so it was enough for two nights worth of meals.
