As with Laura, I compensate by using more garlic, but obviously that's a different flavor and I can't add them in sufficient bulk to really build up a stock the way I used to.
Garlic will, frequently, wind up causing the same issues as onions eventually. As I know from sad and tragic personal experience. I'm playing GI roulette whenever I add garlic! (In my case, garlic started it, and onion's the one that brought up the rear flank in the GI attack.)
It's a different flavor profile, but you get a similar bulk and texture if you use fennel bulbs. (My brother-in-law has Laura-level issues with onions, so if we're cooking and they'll be there, we use the other aromatics.)

If you guys are good at working on cars at all, if you can scrape together the cash, the Volvo 240s are a good option. They're apparently ridiculously easy to work on, parts are everywhere, and the engine will run forever. Maybe even fiveever.
Ours cost us a whopping $800.

I just tried to get in to see my doctor today (I have three meds I need adjusted/refilled) so I wouldn't have to go to work, but no dice. Wednesday mid-morning is the first available. I guess it's off to work I go. At least a short day? I'm feeling on the edge of a panic attack, and really just want to go fetal for the rest of the day, but I can't tell if going to work will make it better or worse.

Ugh. I fear I will have to take another Facebook break because I don't seem to be able to ignore the gun loving posts. And I don't want to fight about it. I had to take a break after the election and just went back, and now this. I would make this place my only social place on the internet, but I like connecting with the relatives and other life friends there. Hate this.
