vegan Mustard greens
Add rinsed canned beans (red beans, pinto, kidney, black), onions, salt, honey, olive oil, tomatoes, hot peppers (mild or hot hot hot as you please), maybe some salsa (hot or mild as you please) lime juice, garlic, parsley , salt, black pepper maybe some red pepper if you like. A tablespoon of lime juice for each serving up to four servings but no more that four tablespoons even if you are making more. (You can use lemon juice or vinegar also. If vinegar use less.) 1 teaspoon of brown sugar for each two servings, but no more that a tablespoon even if you are making more than four servings. Any reasonable variation will work. Cook on high for four or five hours. You can thicken with Masa, or corn meal in the last hour if you wish - anywhere from a couple of tablespoons to half a cup depending on how thick you like it.
This recipe is very forgiving so substitue and change pretty much as you like. I rec against garbanzo beans/chickpeas. I don't think white beans/navy beans/Canolli(sp) beans would be as good, though they would not be awful.
Er I know you know this, but a tablespoon=3 teaspoons. Also I just realized, this is not only vegan, but depending on whether and what kind of fake meat is used it might be gluten free. (Most fake meats are not, but some are.)
