Er... just the fact that the posting keeps getting revised makes me think that these folks don't have it together- and the fact that they want up to 16 hours of your day, six days a week, no flexibility and not a lot of pay... that's not cool. I think that you have been hanging out with Mr. Crazy Doctor Hours too long to even be considering this job!
I would imagine no one lasts longer than a couple of months, because I don't think that people can work like that for longer without physical/mental repercussions.
So, it might be a good source of income on a temporary basis till something more... normal comes down the pike?

oh thank you. I'm going through waves of self-doubt bullshit. my mentor is like "you need to be excited about this" and I'm like: how do I really know they like me? they say they like me, but I'm stunned they like me?
are they trying to fool me? am I lunch?

Seriously, if your mentor knows you well and says you should be excited, they are interested in you. If they're looking for someone who's smart, thoughtful and articulate, you're a shoo-in.
(Because I'm obsessive, I had to check my spelling of shoo-in, which I had spelled shoe. Apparently it comes from horse-racing slang for the winner of a fixed race.)

smonster, I'd be surprised if they weren't breaking state law by saying they required 16 hours per day. I'm pretty sure in Wisconsin, they can't make you work more than 12 and that's 4 hours of overtime on an 8 hour day. I know WI employers can get in trouble for letting their workers work more than 12. Overtime is a choice, and even then, there are legal limits. I'm not sure if LA has the same kind or worker protections in place, though.
