If I won the lottery tomorrow, I would probably quit my job because the boss is not going to grow balls tomorrow, and I don't need to be frustrated by his inability to make decisions. I would probably go back to school to get an arts management degree and work for a theatre in town.

My friend is opening a store in Brooklyn next week. I'm going tonight to help her paint.
Oh hey, I'm following her on Facebook!
If I were independently wealthy, I think I'd open a bakery.
One of the few wealthy people I am friends with (I vaguely knew a few in college but not well) has done a lot of what I would were I her--she went to grad school and more grad school! All ofnit fairly relevant in terms of taking over for her dad someday (he's a real estate mogul and she went to law school and then got a historical preservation degree) but she works for him and sometimes has crappy jobs, but sometimes has lotsof free time.
I don't know what I'd do if I were independently wealthy. I just don't think about it. I don't fantasize about winning the lottery or something because I know it's never going to happen. (OK, I don't play the lottery, but even if I did, I know I'd never win big, as the odds are too small.)
If I were independently wealthy, I would fix up decaying buildings in my city and make them pretty again. I would probably run through my money pretty quickly that way, though.
My one friend with millionaire parents is a pretty regular kind of guy, but they were self-made millionaires and sent him to public school with the rest of us riff-raff. He did do the college-forever-until-he-found-a-career-he-liked thing though.
When I went to fancy college, I kind of assumed I would become friends with rich people who would take me on fancy vacations and stuff, but I never was. My richest friend, I could tell she was rich because they never qualified for any kind of financial aid until her third sibling was also in college, and her mother didn't work. Their house wasn't fancy, but the father did drive a Town Car with a phone in it....
I have no idea how I would have turned out if I'd been born into a very wealthy family. That's very hard to imagine. I'm pretty sure that if I suddenly came into enough money that I could live comfortably without earning an income I'd volunteer basically full time with the organization I do the big bike ride for every year. And travel a lot more.
