I had a good day today!!

Got together with a woman I met at the bariatric support group meeting a few weeks ago at the pool, where I showed her around the facilities (she ended up joining the pool for the year, even though she doesn't live in town, just down the road--it was only $89 for the year's membership for her), and then we went for a swim. I did my 22 laps, but decided to skip the 5 minutes of kicking I was originally planning on because L was waiting for me to get out of the pool and was freezing on the bench.

After she signed up at the front desk, I asked if she wanted to go out for a late lunch/early dinner (it was after 3:00), and she said sure. We ended up at the Thai place near my apartment--she'd never had Thai before, and she really liked it. She took her leftover chicken home, where her daughter and the girl's boyfriend snarfed it down for dinner. Her husband had the white rice, and she's keeping the remaining two spring rolls for herself.

I looked over the menu, and my mind was thinking, "Okay, I can't have anything that requires the rice to cut spiciness, so curry is out. I'd rather have something with lots of protein and relatively little veggies, so I get more protein bang for my buck." So, I decided on sesame chicken, which was 1 1/2" thick slices of chicken breast, stuffed with crabmeat and spinach and topped with peanut sauce. OMG, sooooo good!! I only had one of the four slices they had for me, so I've got dinner for the next three nights in my fridge. There was some veggies on the side, but I told them not to pack them up for my take-home bag.

This was my first meal out at a restaurant since my surgery, (other than the few drivethrough meals I've had) so I was really proud of how well I did! My mind is in the right spot when I look through menus.

I don't think it does, Sox. That reminds me--I should check it out OnDemand tonight or tomorrow morning before it gets replaced with the new ep tomorrow night. Either that, or watch it online.

I'm going to cook up some lemon chicken tomorrow, so I'll have meals for the whole week between the lemon chicken, sesame chicken, and the rest of the chili I made last weekend.

I'm going to put the chicken breasts into a foil pouch with water and lemon juice, sliced lemons and onions on top, and lemon pepper, salt, and a few other spices, and then cook it at 350 for 45 minutes. Does that sound like enough time to poach them?
