We also have breakfast included in the price of each hotel, which I have found to be a big money and time saver. You're not spending all morning looking for food, and if you eat well in the morning it's easier to go cheap at lunch.

I just made mojo tofu from the Viva Vegan cookbook for dinner. This stuff is seriously awesome. Orangey and garlicky and chewy and yum.

I have a chicken to roast that will be done tomorrow. I've never roasted a whole chicken and don't have a roasting pan but whole chickens were $1/lb. I bought a disposable roasting pan and read about using tin foil to make something for the chicken to rest on.
Now I have to figure out how long to cook it. all the recipes I can find are for 3-4 lb chickens. I have 6 pounder, which was the smallest I could find.
