I made a pumpkin/black-eyed pea/rice thing from a recipe my neighbor gave to me. (We're splitting a CSA share and so we always know when the other has, say, a pumpkin the size of a toddler to use up.) Next time I think I'll double the pumpkin and also add kale or mustard greens. And top with hot sauce.
It is pretty goddamn tasty, more than I was expecting it to be because I've never made it before.
I know the easiest biscuit recipe, which is James Beard's:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon sugar (you may want less sugar for plain biscuits and more for shortcake)
1 to 1 1/2 cups heavy cream
Preheat the oven to 425.
Mix dry ingredients. Fold in cream, starting with 1 cup, until dough is easily handled.
Knead lightly on floured surface. Drop on cookie sheet or pat out dough and cut with cutter or into squares.
(James Beard suggests dipping biscuits in melted butter.)
Bake until golden, 12 to 15 minutes
I am a big fan of drop biscuits.
I made a squash quesadilla for dinner, using a sweet dumpling squash, gorgonzola, the last of the arugula, and some heirloom tomato.
Yum. I was just thinking yesterday somebody could make good money with a corner quesadilla stand, but I wasn't thinking of anything so scrumptious.
You know how sometimes a good sandwich on whole grain bread can be so satisfying? Well that's what I had for lunch. Picked the last bits of meat off the roast chicken carcass, then had it with slices of heirloom tomato (very tasty) and lettuce with some mayo.
Otherwise we ate nectarines all day. They were good.
Strawberries: A pint Leave 'em on the counter the afternoon before you make it if you can. Hull and slice, dump in sugar to taste (I use about 1/8 of a cup). Put in blender, add a wee slug of Gran Marnier, hit pulse 2, maybe three times for 1 second each. You want it chuncky
I put it on store bought pound cake, and add whipped cream made with a wee amount of sugar and a couple of shakes of cinnamon, capful of real vanilla extract.
But I've eaten it without the pound cake, with just the whipped cream, or sans whipped cream, over ice cream.
I had a salad with sliced portobello mushrooms, red peppers, tomato and dried cranberries, with a feta-balsalmic vinaigrette.
But that was lunch, and I think I'm just gonna have a couple of frozen burritos now. I'm kinda tired.
I'm skipping ahead because I open up the New York Times today and not only saw my good friend from college, she was standing next to Michelle Obama.
I knew she was doing an event but it's cool to see such a great photo.
