I avoid gluten and The Boy is a vegetarian. Cooking for us is annoying. We have a lot of stir-fry veggies w/rice, into which I throw a handful of chicken or shrimp or some other protein.
The cookbook Veganomicon has a lot of gluten-free recipes, and everything I've tried from that cookbook has been really good. I've also heard good things about The Gluten-Free Vegan [link] , but I've never actually read that one.
