While creole cuisine is more rustic and provincial, cajun cuisine is more refined, in the tradition of classic French cuisine.

Creole was definitely the food of the city and Cajun of the bayous and backcountry.

As has already been said several times.

I apparently am overly-excited/yelly today. unsure why, maybe too much coffee.

Ha! Kara would have a whole lecture about how Irish Channel is NOT Garden District, nor Lower Garden District. I don't care as much, so I'll spare you.

I think of Cajun as "Start with a good base. Throw everything in the pot, spice it up and see what we have," and Creole as native with European influences. Like fusion places are the new Creole sort of thing.
