I only know how to can without a pressure canner, I am sorry. But I think you want to make sure you have room for the size jar you generally use, and maybe 6 jars at a time? Can you use the pressure canner as a pressure cooker?

Just taste it as you go, and add the spice mix in batches - pour some in, stir, let it cook a few minutes and taste, etc.
I've never used the crumbles but IME the tomatoes with peppers and the chili beans rarely add a lot of spice so you should still be able to go nuts with it.
There is a NYT columnist and author named Gina Kolata. And every time I see her name, I can't help singing "If you like Gina Kolata.... gettin' caught in the rain.". It is driving me crazy. I am highly suggestible with earworms-- in fact I could not figure out yesterday why I had "DO you know the way to San Jose" stuck in my head, but then I remembered that Kat posted about being in San Jose!/

I've always used the non-Mexican (i.e., not flavored with any kind of spices) Smart Ground, and just plain tomatoes, so the chili seasonings packet was necessary.
P-C, yours sounds like it'll be very tasty and flavorful -- I fully admit that I make my chili on the VERY mild side.
