If you're looking for somewhere in Turkey other than Istanbul (and don't get me wrong, Istanbul shouldn't be missed), I recommend Kusadasi on the southwestern Asian coast. Kusadasi itself is a pleasant seaside resort town. But more important, it's an easy drive to the ruins of Ephesus. And you really, really should see the ruins of Ephesus.
I can't be as helpful for Greece. Other than must-see sights in Athens, I only saw Mykonos and the Corinth Canal. I highly recommend Mykonos. I got heatstroke on the Corinth Canal, so I'm not sure I can be fair to it.
