I have to take them out too, and it's annoying. But I still maintain that two spaces is more readable.

I try to remember to take out my double spaces but I don't always remember. Old habits die hard.
If you use Word, the simplest way is to change the setting in spellcheck.
I had a friendly programmer at my office write a macro for me that removes double spaces from the manuscripts I'm editing. Two keystrokes and they're all gone. I am a big proponent of automating repetitive tasks.

Oooh, I hate that too, but I set a custom template for my Word docs, so I rarely have to deal with it.
