I guess a resurgence wouldn't fly between modern day health codes and the way some people behave in restaurants. I always wanted to eat in one.
I have been googling too, because I just want to know about the waitress thing. It sounds like they had cashiers and also people running around refilling the machines. This one looks like a normal diner, with dessert in the automat part.
I ate in an automat as a kid. 60s. Don't remember if it was in California or during a trip to New Jersey. Given existence of vending machines that sell burrito, and the existence of buffets/salad bars don't think health codes would prevent revival. Think that they were made oboselete by the dim sum system where you are dharged by the number and color of empty plates. Same labor savings, lower capital cost. and still get chared for what you eat rather than having an all u can eat system. Seen it in regular cafeterias, not just din sum places I know classjc dim sum is they bring a cart around, but I've seen dim sung done cafeteria style.
A cafeteria with snack machines is essentially the same thing as the automats I've been to. And the food was just as bad. (Worse, actually. The CC where I teach has a culinary department, so the cafeteria has some really good student cooks.)
The wheels of death you see in some vending machine areas could be considered the modern automat. Never get a tuna fish sandwich out of those things.
I always wonder why they seem to choose all mayonnaise salad things in those cafeteria sandwich vending machines. Egg Salad, Tuna Salad, even ham salad! If I want to eat a sandwich of questionable freshness, it would not include mayo.
I thought that the mayonnaise actually didn't tend to go bad, it was the meat used in those -salad dishes that goes hinky after being unrefrigerated too long?
I mean, a tuna steak sandwich that's been sitting out at 75°F for a couple of days isn't going to smell like a rose despite the lack of mayo.
It's usually the protein, yes. I mean, a jar of mayo stays good in your fridge for ages.
Mayo is acidic enough that it actually acts as a mild preservative. (Left in the sun it's gross, but not dangerous to eat.)
