I think there are about 24 episodes so far that appear to be recommended, which is a little over a quarter. A fair chunk, more than I was expecting to watch, but it should be good fun.

I'm looking at various Best lists to see which episodes off that Top 35 I should look into. Most of them appear on all the lists or have also been recommended by others. IGN adds "The Enemy Within," which sounds like it's awesomely ridiculous with the good Kirk and evil Kirk business. Those episodes are always a hoot. And EW adds "This Side of Paradise," which sounds like it might be a good Spock episode. Are they good? Does anyone here second "The Ultimate Computer," "A Taste of Armageddon," "Errand of Mercy," or "The Immunity Syndrome"? Those are the only other episodes people I know haven't also recommended. Also, anyone second "Day of the Dove"? I'm trying to keep my watching manageable! Also, my computer makes funny noises when I watch on CBS.com, so I don't want to kill the poor thing. Watching television online legally makes me feel like a contributing member of society!

Enemy Within is another episode that's great for a trope. Also, evil Kirk wears eyeliner.
This Side of Paradise is a good Spock episode, definitely. And it basically involves sex pollen. Immunity Syndrome is another good Spock episode.
The Ultimate Computer is fine, but I wouldn't call it a must-see. Same with Day of the Dove, which features Klingons.

I like "Day of the Dove" a lot. Good Klingon episode. Also, the Klingon captain is one of the ones who showed up on DS9 (Kang, I think). Michael Ansara in any case. "Errand of Mercy" is another good Klingon episode (and I think it also has one of the other DS9 Klingons - Kodos, maybe).
ETA, not Kodos (who wasn't even a Klingon); Kor. But it was the John Colicos character.

I'm trying to watch in order anyway, but I might go back and watch ones I skipped later if I feel like it. (The lack of continuity is one reason I don't feel compelled to watch every single episode.)
