Dude, just pick an ep and start watching. If you hate it, stop. If you like it, keep going.

Enemy Within is another episode that's great for a trope. Also, evil Kirk wears eyeliner.
This Side of Paradise is a good Spock episode, definitely. And it basically involves sex pollen. Immunity Syndrome is another good Spock episode.
The Ultimate Computer is fine, but I wouldn't call it a must-see. Same with Day of the Dove, which features Klingons.

I like things to be cut-and-dry! That seems far too sensible a course of action. BUT MAYBE I WILL TRY IT.
Thanks for the input, Dana.
IGN adds "The Enemy Within," which sounds like it's awesomely ridiculous with the good Kirk and evil Kirk business.
See also "The Turnabout Intruder", where a woman from Kirk's past switchs minds with Kirk so she can be a Starfleet captain.
I like "Day of the Dove" a lot. Good Klingon episode. Also, the Klingon captain is one of the ones who showed up on DS9 (Kang, I think). Michael Ansara in any case. "Errand of Mercy" is another good Klingon episode (and I think it also has one of the other DS9 Klingons - Kodos, maybe).
ETA, not Kodos (who wasn't even a Klingon); Kor. But it was the John Colicos character.
It was the 1960s. They hadn't invented continuity yet. You don't need to watch the episodes in order.

Except for "The Menagerie/The Cage".
Also, essential viewing (for Capt. Pike and the remnants of the original pilot).

What! Ha.

twitches
I'm trying to watch in order anyway, but I might go back and watch ones I skipped later if I feel like it. (The lack of continuity is one reason I don't feel compelled to watch every single episode.)
What! Ha.
You haven't seen anything until you've seen Shatner channel his inner "woman".
"Catspaw" is one I really enjoyed that I haven't noiced anyone else mentioning. It was my first exposure to the Cthulhu Mythos!
What's the one where it's Kirk vs. a Romulan ship and it's basically a submarine fight in space with the lurking and the decoys and the glayvin?
That's a good one.
