I am in charge of making fish tacos tonight. I'm going to make some guacamole because we got an avocado from the farm, pico de gallo with our tomatoes from the back yard, and make a crema thing with lime, mayo, and sour cream. Trying to figure out the best way to prepare the fish- I will almost certainly cook it on the stove top, not the grill, and I don't want to deep fry it. I think this prep of the fish: [link]
Does anyone have any other ideas for prepping fish for delicious tacos?
A mojo would also be good, Nora. Sour orange, lime, lots and lots of garlic, Spanish olive oil, salt, oregano, and cumin.
to marinate the fish in, Barb? Hmm, I don't have sour orange, but I do have everything else.
We are having Rosalita's TexMex tonight as Bobby's choice. Yum. I would have cooked for him but he cooks so much himself now that going out is more of a treat.
Do you have regular orange juice? You can cut it with lemon-- two parts orange to one part lemon and approximate the sourness.
And yeah, as a marinade. It's seriously yummy stuff.
Also? My house is smelling soooooooo good right now.
Happy Birthday, Erin!
Happy Birthday, Bobby!
I am having a very lazy Saturday: watched about 12 hours of Angel that Tivo picked up for me (the Dark Wesley arc) and napped on the sofa.
Seriously, I want all y'all to cook for me. DAMN.
Went to Macy's this morning to get jeans for our upcoming motorcycle trip to Tennessee. I tested each by crouching in the dressing room to make sure they would be comfortable and the two best pairs had part of the waist elasticized. So I will be wearing mom jeans under my leather chaps.
ETA: tortilla espanola
Thank you! Guess what we're eating for dinner right now?
I had potatoes, eggs, onions and other stuff and so I had a crack at it. It came out perfectly! I'm surprised. Usually I'd overcook the potatoes or it'd fall apart when I flipped it but it's gorgeous. I added: asparagus (which I pre-steamed), spinach, bell peppers, fresh rosemary and garlic.
We're eating it with some curried mayonaisse. Mmmmmmm.
Apparently you can cut off a chunk and serve it on a baguette as a sandwich too.
