Now I have a job in front of me I can't apply for because it wants the start and end dates of all the projects I've worked on. I have no idea. I've worked on tens of projects. No one told me to take notes. Why can't they just look at my resume for the basics?
I'd just ballpark it and explain when you get to that point.

Emphasis theirs. And I can't even ballpark most of it. All I've done for 20 years is project after overlapping project. I could only date the last two. I don't want to be that applicant who submits like she thinks she's special.

Nope. Multiple per. The last job only had two, so it's easier, but the rest are a blur and pretty much always were. I can list them and give overviews, but that's it.
Get one of the resume people here to manage it. I'm not one, though I wish I was.
