sj, if you've got mayonaise, you can substitute an egg-sized blob of it in many recipes. I've used it in in corn bread, brownies, cake mixes, and meatloaf. Nice and moist, and doesn't add weird flavor to the sweet stuff like you might expect.

Yogurt can also substitute for eggs. Also, soy milk with a little bit of apple cider vinegar mixed in, but that one takes some experimenting to get the proportions right.
