Not if I make it a Page instead of a Profile. For example - here's the page I did for "Fishing" *cough*selfpromo*cough: [link] You have to have an account to post anything to the discussion board or wall, though.

You could create a public event; that way you could even track who's attending and who's not, informally.

My only concern would be random Facebook people showing up at the hotel expecting a convention.
I'd opt out of anything on Facebook, because it's TMI for the peeps out in Facebook land, but that's just me. I could read and just not post, and then it shouldn't show up in my "news".
We do have a Buffistas group on Facebook, already. I don't think we've really used it for much of anything. I don't know what kind of privacy controls we can put on it, but if we can make it for members only, that would reduce having half the world show up in it.
