I had leftover homemade spaghetti carbonara with peas for lunch. I used free-range eggs from the farmer's market and they are a freakin' revelation. Eggs being fairly cheap, I may never go back. The sauce is like velvet. I can't wait to see what these eggs do in cake.

Mmmm... sounds lovely. I may have to see if I can find some good free range eggs-- one of my favorite pasta sauce recipes is a Nigella one that uses eggs, lemon juice, and Parmesan cheese.
Although, given that the eggs remain primarily raw, perhaps best that I stick to pasteurized eggs.

It's probably not the free-range so much as the freshness aspect. Fresh eggs are awesome. One of the things I miss about the Eastern Shore is the weekly home delivery from my "egg boy"--9 years old and cute as a button.
