My sister's husband is the same way - won't eat leftovers.
He'll eventually eat them; just not the very next day. Which is fine, we don't waste food, but sometimes I just don't WANT to cook 2 days in a row, or maybe *I* want the leftovers, but then he gets all sad (seriously), because "I think it's nice when we eat the same thing for dinner!" (Which, I've pointed out many times, ain't gonna happen every single day, because he's a vegetarian, and I need animal flesh sometimes. But whatev.)
Yay for free food! Someone brought in a few coffeecakes, just as I was about to head down to the cafeteria and grab a donut or bagel. Yum, raspberry coffeecake...
I am one of the people who does not like the same thing two days in a row, but I have been broken of it now that I am cooking for two and usually two different things. mac is one of the picky eaters, but it is more of a control thing than anything else.
My friend's two-year old boy twin will eat pretty much anything. the girl is on a strict milk and goldfish diet pretty much, right now.
Aimee, something with some salt might brighten up your stir fry flavors... I like salt (duh), soy sauce, or bottled asian-style sauces like hoisin or oyster sauce put in at the end. You can also try marinating the chicken in a sesame oil/soy sauce combo (this is what we do with our tofu). It sounds like you have some yummy stuff in there, maybe all you need to do is crank up the flavors by experimenting with seasoning.
We make veggie/tofu stirfries all the time, but we actually followed a recipe for one a couple weeks ago that included cashews and lime juice/zest and it was *really* good.

I'd can't quite agree with that (a dressed salad, for instance will be well nigh inedible a few hours later, let alone a day), but some things certanly do (almost any soup, stew or chili, for instance).
I am totally a creature of habit, and would eat the same thing for days if left to my own devices. Usually I eat something a lot for about 6 months - year and then it become only an occasional dish.

My kitchen and bathroom project is completely finished. My friend finished it when I was out of town. I haven't had a chance to set up either room and the rest of the house is a disaster and I haven't had time to grocery shop. I hope to do all that by this weekend and actually use my new kitchen. It is beautiful though!
