If you have lettuce and veggies, you could do a peanut chicken wrap thing, too. Shredded or julienned carrots, peppers, er....cucumbers, maybe?
Although if you have the noodles, those would be yum.
You can also just dip the chicken in the peanut sauce, and call it modified South Beach.
