Safe to put it back in the freezer? I'm pretty sure the "don't refreeze" thing is because it's giving the bacteria way more time to grow, and I don't think that bacteria is that much of a problem with a loaf of bread. Right?

I would think so, but I also think that freezing bread makes it less good, so freezing twice would make it double-plus less good.

I agree, but I'm not going to eat it this week, and it's not really good enough to give to anyone (what I usually do with leftover baked goods), and so if I don't refreeze it, I'll probably just end up throwing it out. Which seems worse than just having it be not quite as good as before.

I'd refreeze. If when you thaw it out , it isn't good - then toss it.

Bread should be pretty straightforward. I think you'll be safe. Besides, I've never really heard of anyone getting ill because of bad bread.

Well not canonically, no, but this is transformative fiction.

Freeze, defrost, make vegan bread pudding. Or French toast. Or toast toast. Those don't seem that impacted by the bread having been frozen.
