lisa - if you can, tonight look at what you have in the freezer/pantry that you can make casseroles out of - (pasta, ground meat, veggies, cheese, with red sauce or cream soup - is the easiest thing I can think of). Cook up what you can. You can also cook up ham/turkey burgers and freeze them, or with less work, cook up several chicken breasts (in foil with veggies). you could do a good 2 weeks worth with not much work.

I am trying to clean out my freezer so I can have 10 - 12 meals in ther at all times.

TJ's has a LOT of food that is both microwave-able as well as healthy. That's what I love about them.

Trip to TJ's on Sunday will also have to be on the weekend's menu for sure.

Also, cleaning out my freezer!

Flipping out and quitting my job, unfortunately, does not come with a cash prize, which may be the only way I can afford to fly into Richmond.

Oh, man, I'm freaking out a little now.

If it is any consolation, I emptied my whole kitchen in under a couple hours once. Keep in mind you don't have to do all the sorting *right now*. It might mean a mess of boxes in your diningroom for a bit, but if you can live with that, you can do all the sorting at a more leisurely pace.

It might mean a mess of boxes in your diningroom for a bit, but if you can live with that, you can do all the sorting at a more leisurely pace.

The problem is that the dining room is going to become my defacto kitchen.

Now I'm feeling all HERE'S WHY YOUR SOLUTION WON'T WORK about it! I hate it when people do that!!!

So, yes! it's true I don't have to work out the sorting of stuff completely by Monday.
