That had been my plan but I don't think I'll have time to do much cooking between now and Monday. I am co-hostessing a big baby shower most of the day Saturday and I have to do a long, long ride (40 miles I think) on Sunday morning. And I have to get everything out of my downstairs bathroom and kitchen (figuring out if it's trash, yardsale, keep but put away, keep but need during redo).
Oh, man, I'm freaking out a little now.
chicken tenders, baked potato, frozen veggies, burritos (thank you, Trader Joe's!), etc.
I'll be doing a lot of Trader Joe's I think. Although my other concern is that I'll be in training for this huge bike ride in mid-May so I have to be eating with that in mind. healthily.
The timing isn't great but this is when my friend the contractor could fit me into his schedule.
Fortunately, I do have good friends who live near enough that I can make food at their houses and bring it back to mine.

TJ's has a LOT of food that is both microwave-able as well as healthy. That's what I love about them.
A lot of Trader Joe's stuff is nutritionally reasonable, and certainly doesn't create a lot of dishes! Me, I'd be eating takeout and toast, for at least the first few weeks...

lisa - if you can, tonight look at what you have in the freezer/pantry that you can make casseroles out of - (pasta, ground meat, veggies, cheese, with red sauce or cream soup - is the easiest thing I can think of). Cook up what you can. You can also cook up ham/turkey burgers and freeze them, or with less work, cook up several chicken breasts (in foil with veggies). you could do a good 2 weeks worth with not much work.
I am trying to clean out my freezer so I can have 10 - 12 meals in ther at all times.
