Does Forever go in here because of the immortal aspect? I have only watched the first episode so far, but I do not understand how he was able to figure out what poison it was simply by taking it.

She's always been able to find a way to contact them before, so probably witchy powers, yes and a generous amount of handwavium.

Interesting characters, pleasantly crafted problem, only moderately intrusive flashbacks. And it looks like the potential romance between our hero and the lovely female detective is being foiled by good reasons. I'm unclear on the relationship between Henry and Abe. Is Abe his son?

Back to "Sleepy Hollow" for a moment. In terms of Irving signing the paper,a and whether it counts. There ill-intentioned magical traditions where to cast a harmful spell requires the victim's consent, but that consent is defined very loosely. For example, say a practioner of such a path wants to cast a leprosy spell on Herbert. The evil witch can walk up and say "Is your name Herbert?" and when Herbert unsuspectingly says "yes" , Herbert has just consented to the leprosy spell.
So if the contract is for Irving's soul, then it is hard to fanwank. But for anything short of that, within certain magical traditions, Irving has just opened himself up to all sorts of really bad shit.

The question of why Abe has a New Yawk accent and his father still has an English accent is probably not going to be explained ever.
