I really liked the S2 premiere. I have no worries about jumping in at S2 -- hell, I started watching Buffy in S4 and did just fine (other than the part where I really liked Riley and totally didn't get the whole Buffy/Angel thing). But I do want to go back and catch up on S1.

Sleepy Hollow: this is one show where "willing suspension of disbelief" is necessary (OK, one of MANY ... many I like).

Like earlier - I was wondering where the Horseman had his seekrit Hessian Hideout (and why an upper-class (rich if not actually aristocratic) Anglo-American was fighting with Hessian mercenaries).

I don't think he was fighting with the Hessians until after he was captured and/or killed.

I figured the Wacky Misty Forest around The Lost Colony was some kind of Space-Time distortion not entirely unlike that which surrounds Brigadoon. Obviously some of the details change as to how and when it can be found by outsiders.
