Old English, the language of Beowulf, was a close cousin of Old German. Middle English, the language of Chaucer, kept some German-like pronunciation. For example, enough ended in that strangled Germanic K. IIRC, the scholarship that determined how Old and Middle English were pronounced, based on things like rhyme schemes, post-dates Ichabod.

FWIW, I can't think of any other TV show that's used Old English, even if it wasn't period-correct. ::still twitches::

I was not expecting Morales to have Oxford confirm they had a professor called Ichabod Crane who was on loan to police. Who was that on the phone! What a lovely twist.
I suspect that the good witches in Sleepy Hollow may have had something to do with that. Like maybe the Captain.
The whole thing is so ridiculous, it's awesome. And when he gets snarky, I couldn't care less how absurd it gets, because he is just that adorable.
