You missed the second half of that sentence "and leap to heights humans can't, lift things humans can't"
Monroe might not look "wolfy' to the girlfriend, but he still would be leaping from the ground to the roof, or maybe lifting a Volkswagon (not sure he is THAT strong) and in general performing feats of strength. We've been given no reason to think humans can't see feats of strength even if the Weisen form looks human to them.

I thought it was just that a Grimm can see glimpses of the true form when the Wesen is in human form. Surely a regular human being attacked by a blutbad in full on wolf form would see a wolf or why the big bad wolf stories?
It's curious that Nick has noticed nothing at all weird about Renard. I suppose he's got iron control.
I am unclear about whether Grimm blood strips Wesen-ness in general, or just when a potion is in play. Or just Hexenbeasts. Not a lot of clarity in the mythology at this point.

That would actually make more sense. I had gotten the impression that only the Grimms could see the Wesen's true form at all, but I don't know.
Haven't seen the latest one yet. I figured Renard was not a Wesen since Grimm-guy* hadn't twigged to anything amiss. But again, I don't know.

I still insist that the main character's name is Monroe. Nick is just a sidekick, no matter what the showrunners believe.
And I'm pretty sure Reynard is a weissen. Maybe they'll surprise me and he'll turn out to be a Grimm. I don't remember whether or not we've ever seen him "change". I seem to remember a glimpse of him in fox face, but who knows If I actually saw that or extrapolated it from the name.
