Yummm, pancakes...

Growing up, Bisquick pancakes were an occasional weekend treat, but the big celebrations called for Swedish pancakes from my grandpa's family recipe (he was born in Lulea, Sweden, and brought some great recipes with him back in the early '20s). My brother's kids love it when he's in charge of Sunday breakfast because he pulls out the griddle and syrup (we don't normally have lingonberry jam available, sad to say).

For pancakes I grew up on the Bisquick ones, but most of the time we had crepes made from scratch (generally served a bit thicker than tradtional crepes). Toppings for the crepes were either maple syrup like a p-cake, or sprinkle on brown sugar and roll it up into a tube.

information libertarian

We frequently have Breakfast For Dinner. Which for us is usually waffles, bacon and fruit. I guess we tend to do it more often in spring, when we have an overabundance of strawberries with which the bury the waffles.

Frank, it sounds like your crepes were closer to my Swedish pancakes, which I've always equated to thicker crepes.

I just had a wonderful idea. My Swedish friend from work just brought back some homemade lingonberry jam. She's also coming over for dinner tomorrow night. I sense pancakes in the offing...Mwahahahahahah!

Good Trouble and Righteous Fights

The pancakes we had on Shrove Tuesday the year I lived in England were what I'd call crepes.

They were also yummy, of course. Nothing like a warm crepe with sugar and fresh-squeezed lemon juice. Nom nom nom.
