Mmm, I love having pancakes for dinner. Whenever we do that for Pancake Day (which is how it is referred to in our non-religious house) I always say, we should have pancakes for dinner more often. I mean, why not, right? Never happens though. It makes pancake (and paczi) day all the more special though, I suppose.
I actually made pancakes (for breakfast) yesterday, for the first time in yonks. Almost more blueberry than pancake, and they were teh yum. Banana pancakes are best though.

Yummm, pancakes...
Growing up, Bisquick pancakes were an occasional weekend treat, but the big celebrations called for Swedish pancakes from my grandpa's family recipe (he was born in Lulea, Sweden, and brought some great recipes with him back in the early '20s). My brother's kids love it when he's in charge of Sunday breakfast because he pulls out the griddle and syrup (we don't normally have lingonberry jam available, sad to say).
