This pumpkin butter recipe looks the best of the ones I have looked at. Most seem to call for all white sugar, this one calls for dark brown sugar. Of course that puts the nix on an easy conversion to the use of sugar substitutes, but c'est la vie. [link] Another point in its favor is its accuracy on canning directions: which is to say, it says don't do it, recommends storing in fridge or freezer instead. This matches the official government home canning safety standards thingy, as pumpkin is too variable, and generally not acidic enough, nor is there enough sugar added to prevent bacterial growth.

Our desks are not line-of-sight from each other, but near enough that sometimes I can hear Harvey purring from Daniel's shoulder over here. This does take care of my concern that we had spent so many years keeping company online that we might not be able to effectively communicate by, you know, actual talking.
