That's what I was wondering! As a recent fan of the show, I thought I was missing something, but until last night, I never got the impression that these two guys hung out outside of work. And the way that Tony just strolled into the room with the six-pack of beer definitely felt like it had happened before.
It has been shown in previous episodes that Tony knows that Gibbs always keeps his door unlocked and Tony is aware of this.
Tony stayed with Gibbs when he had problems with his apartment and he knew that Gibbs kept his door unlocked previous to that. It's unclear, however, how widespread a piece of knowledge Gibbs' unlocked door is.

There seems to be a theme this season of parents and children, with Gibb's dad in a previous episode and the mention of Ducky's mother last night. It wouldn't surprise me if Gibbs felt that Tony needed more fatherly time after seeing the waste product that his real daddy is.

While I can totally see that, and can even see Tony looking up to Gibbs and seeking his approval, I totally don't see Gibbs in more than a loosely avuncular role to him. Whether or not he was invited, my point is that it's how many seasons in and we're just now seeing Gibbs invite someone into his home for a meal? Most all of the other visits were visits provoked by some sturm and drang or the other. Only Fornell had a truly convivial air with him. Who I miss, BTW.
One of the reruns on Monday was where they had to work with the FBI on a case, and Fornell comes storming in to the office, all pissed off, Gibbs barks out "Conference room!" they go storming off into the elevator, flip the switch, and break out laughing over their little charade. I love watching those two in their conference-room chats!
Oh, and now that I finally got caught up on Castle last night, I have to say, Esposito? Should wear suits with vests more often. Man look damned fine during that interrogation with the jacket off and the vest buttoned all the way up.
