I like the way the gently curved blade rocks on the cutting board.
If the blade is curved enough to rock back and forth, it's not a real santoku, it's a santoku-style chef's knife. Santoku blades are tapered, but almost entirely flat on the sharp side (like a cleaver).
ION, I am having a completely shitty day. If anything else goes wrong, I quit. I will retreat to my cave and come out when things stop sucking.
(I'd go into specifics, but most of them are job-related & therefore unsuitable for public posting. Suffice to say, everything can BITE ME.)
Huh. Ours are kind of a cross between the two. They're definitely more santoku shaped, but with a slight curve to the blade. Though there was less of a curve than I was remembering, I just checked. The curve is mostly toward the tip (but still there).
