Henckles or Wustof are good, sj.
My bro recommends Wusthof, but he's a professional chef with big (scarred, burned, sliced) hands.
I love my Henckels.
All you really need is one really good knife -- my bro recommends a Santoku knife (not that specific one, necessarily; I just wanted you to see what the style *looks* like, with the hollow edge).
And I agree with Jess -- what's most important is which one feels good in your hand and isn't too heavy. The one that suits my Sasquatch of a bro very likely won't suit your petite self. (And then again, it might. Which is why you should test them before registering.)
Whatever knife you end up registering for, make sure you also register for a sharpening steel/stone that is meant for *that specific* knife.
Aw Ginger, I'm so sorry.
Is he close by enough that you could go and see him? I'm sure a visit from you would bring him joy.
would benefit by spending some time absorbing the heat of Jack Harkness.
Everything goes better with Jack.
And New Watchers/Torchwood fic isn't really a stretch, after all

He's about 90 minutes away, Trudy, so probably not.
I wish my principal last year had used that!
Mine uses something similar for her informal, 15-minute observations. "Wows" and "Wonderings" she calls them. They have a star! And a thought bubble instead of a wand. I love my principal.
I don't know a whole lot about knives. I got my set from Cutco, because I had a friend who could get them for me at 50% off. Based on reviews, they're definitely worth it with the discount, though not as good as some brands at their actual price point. Still, leagues better than anything I had ever used before - I love them, and cut things with impunity.
hmm...maybe I'll get some good knives (and a sharpener and I'll actually sharpen them) when I get my kitchen redone this winter. And new dishes and new cutlery and and and...okay I could totally go overboard with this "re-doing" thing.

Does she make sure she does 2 wows for every wondering? This would have been... I can't tell you how much more helpful.

And not to disagree with a man who has his own restaurant, but I think that's craxxy. A Santoku is really only good for slicing -- for chopping/mincing/dicing/boning, you need a chef's knife. (Which can also slice tomatoes just as well as a Santoku if you keep it sharp.) I love my Santoku, but I'd never give up my chef's knife for it.

That's the goal, though I've certainly had her in classes where that would've been rather hard. Especially in my first couple of months teaching last year, when I was brand new. Generally, though, she gives a good mix.
