I wish my principal last year had used that!

Mine uses something similar for her informal, 15-minute observations. "Wows" and "Wonderings" she calls them. They have a star! And a thought bubble instead of a wand. I love my principal.

I don't know a whole lot about knives. I got my set from Cutco, because I had a friend who could get them for me at 50% off. Based on reviews, they're definitely worth it with the discount, though not as good as some brands at their actual price point. Still, leagues better than anything I had ever used before - I love them, and cut things with impunity.

All you really need is one really good knife -- my bro recommends a Santoku knife

And not to disagree with a man who has his own restaurant, but I think that's craxxy. A Santoku is really only good for slicing -- for chopping/mincing/dicing/boning, you need a chef's knife. (Which can also slice tomatoes just as well as a Santoku if you keep it sharp.) I love my Santoku, but I'd never give up my chef's knife for it.

That's the goal, though I've certainly had her in classes where that would've been rather hard. Especially in my first couple of months teaching last year, when I was brand new. Generally, though, she gives a good mix.
