My mom makes really good corncakes but there's not really a set recipe. It's just a cup of cornmeal, an egg, roughly half a cup of milk (enough so the texture is moist but not runny, and can be slowly poured) and sugar to taste. Instead of baking it, she pours the mix like flapjacks into a skillet with heated canola oil and flips each cake when the top side is riddled with bubbles and solidifying.

This sounds very yum, although I'm actually making the cornbread to bring to a friend's place who is making chili. I've marked DJ's recipes because they also look of the yum.

Unfortunately, in stopping at the store to pick up the various ingredients I "might" need (sour cream, peppers, cheese), I forgot that I might, in fact, need cornmeal. Duh.

Of course, right now I'm more focused on trying to reach my brother and/or his fiancé in Minneapolis.

About 75%. A bunch of people are in summer stock outside of the city, and the timing means the ones who are still in the Cities were probably either in rehearsal or at home at the time of the collapse. My core group is fine. The one I'm most worried about is Carl, actually, since he lives so close to the bridge & uses is every day.
