The story's not the greatest, but I would enjoy it except for those fucking udders!
A friend listened to the commentary or some interview or something, and the creator basically said that they have udders because he thinks udders are funny. Like-- everything is funnier with udders. Apparently (I have never seen this) the ones with udders are male cows, but there are also bulls, with no udders and horns.

Maybe that's where the animators got confused, they thought udders make an entirely different fluid than what they do.

I don't think there are any bulls without udders in the film. The creator is just wrong. Udders are not funny when they're distracting you from a perfectly good story.
If you accept not-logic that "cows have udders" and you give every cow-like creature an udder, you then avoid the icky questions of "Parent-person, why doesn't that cow have an udder?" and you can avoid the whole male-female physical differences thing.
Disney (and the kid cartoon world), they're just protecting the kids.

It's Dreamworks in this case. And the funny thing is that there is a pregnant cow in the plot. She has her baby at the end of the film so there is a distinct difference between male and female cow characters.
