was a bit of a surprise. I thought it was part of the trapped-in-Sylar's-head montage. (though it looks like a terrible job that would fall down if someone sneezed on it.)

I liked Matt's lock him in a nightmare, put his body behind a wall Sylar solution. Especially as an improvisation.

Had Matt kept him there he would have to be glad that Sylar didn't steal D.L. wall phazing power.
I just could not make the leap to Matt letting Sylar slowly starve to death let alone decompose.
Can Sylar die?
Personally, I think it's far past time he should, and since violent means won't work, starving him to death is a good plan if it can succeed.
