Any idea when they'll actually ship? Or when they'll be available for Windows, which affects whether I have to buy a Mac too.

The website says they're Mac compatible. Have a look! It's fascinating.
Does that mean they would work with iPad? Probably not if it doesnt say.
I've perused the entire website and am salivating. In one video the saleslady says Windows-compatible version is coming, but doesn't say when.
In that video I linked to earlier, they said the Windows software was in beta.
There's no reason to assume Mac compatible is iOS compatible, especially with the differences in the capability of the hardware.
I've seen a couple cameras that are for the iPad. Are there many?
Ah, I found the Support page. It says:
"Lytro Desktop for Windows will be available in early 2012, and will support the Red Hot, Electric Blue and Graphite models of the Lytro Camera that you can order right now."
There's an add-on to allow iPad camera connection by USB, but I don't know how universal it is. It supposedly works with CueCats. How that would or would not work with Lytro I can't speculate.
And further on the Lytro:
"You will be able to choose a focus point and export to JPG at a minimum 1080 x 1080 pixels."
Ah-ha, finally, the answer to actual question:
There is not yet an iPad/iPhone app, but they're working on it. You will be able to view and refocus living pictures via the iPad and iPhone app, when they are released. Note that you will NOT be able to transfer pictures directly from the Lytro Camera to your iPad or iPhone. These apps are only for viewing living pictures, and an active internet connection will be required. Right now, you can still experience living pictures at lytro.com via the native mobile browsers on your iPad and iPhone.
They're offering storage on lytro.com for photos, as I understand it.
