Don't bargain on that. It's not much effort.
Also, if they see you type in your password, change it right away. It's standard operating procedure for them to be exposed to passwords in their work, depending on how much of the heavy lifting they might be doing, but since you should be changing your passwords regularly anyway, I consider that level of tech involvement a reason for skipping ahead in my schedule.
I gave them my network and email password to configure my new laptop today, and first thing tomorrow, new one.

gmail has tried to change me 4 times. I immediately click the button to change back. I think they are getting the message that I don't want the new look. I wouldn't care so much I suppose if I could have my custom-colored theme, but they don't have custom colors for the new gmail and I don't like any of the default options.
It's complicated and will throttle your bandwidth to a fair amount, but you could use your home computer as a proxy over a SSH tunnel which would encrypt everything you do.
I have no idea if you can SSH tunnel on an iPad though.
Does Astrid not have a non-web, pc version? With my bandwidth limitations, being completely web based is a no go. With evernote, I can do stuff on my phone or on the computer and then sync when I choose. Or on the web, but that's a third option, not the only way.
I've never seen one, Liese. That would be pretty annoying. Sure, most computers have internet access most of the time, but people move their laptops, dammit.
I don't like the web client much (I only really would have cause to use it on my Mac), and the tablet app is my primary method of interfacing with it. But I think it would be my main way in anyway.
Now that I'm faced with my new laptop, I'm trying to work out how to handle my data in the safest way. I still want the ease of storing documents locally, because I don't want to have to connect to the VPN to do every small bit of business, but I get how I can't depend on that.
Does anyone know of a tool with which I could schedule file copies to a network location, that also won't scream if I'm not connected? I'd like something that tried daily to back up my email archive and my desktop/my documents, but didn't freak out if it missed one or three times.

no. I have bought more than one and really like them. You also can get applecare for them.
I buy all my Apple stuff refurbished, never had a problem.
