Yeah, Preview will do it. Just open the first file, open the side bar that shows the pages, and drag the next file on top of the last page of the first one. Wash, rinse, repeat.

Neat. I never really used Preview for anything other than as a viewer -- I guess that, based on the name, I assumed that was all it could do.

Well not canonically, no, but this is transformative fiction.
Unfortunately Android File Transfer doesn't work with the Galaxy Tab. It's Kies (unwieldy) or nothing. Dropbox, I suppose, if you can wait.
